A NEW distillery based in the Surrey Hills is preparing to take the spirit market by storm after officially going live
Up until now Ian McCulloch and his team at Silent Pool Distillery in Shere have been testing their equipment using just water.
But after finally seeing their long-awaited distillery licence come through, the plant went “alcoholic” for the first time last week – with apple brandy the first of many new drinks being prepared for the market.
The spirit, made using cider produced in the orchards at Birtley House in Bramley, flowed from “The Major” – the team’s main piece of equipment – which is powered by firewood harvested from the 150 acre Albury Estate.
